Emmer, an ancient hulled wheat, was one of the first cereals ever domesticated in the Fertile Crescent. Over the centuries, emmer was gradually abandoned in favor of hull-less and higher yielding varieties of durum wheat. Emmer is known as farro in Europe and is staging a comeback as a gourmet specialty as both a whole grain and flour. Farro is a catch-all Italian term for “ancient grains”?. Emmer is considered the original farro which is why we refer to our Emmer as “Emmer Farro”.
Our Organic Semi-Pearled Heirloom Emmer Farro comes to us from a farm in Montana. High in protein and low in gluten, emmer farro is a heirloom grain with a simple structure; it has 28 chromosomes as compared with over 200 chromosomes in modern wheat.
While whole grain emmer farro takes more than an hour to cook, semi-pearled will be ready in about 20 minutes. Emmer farro’s sweet nutty flavor is a natural fit for pancakes & waffles.
Cooking directions: for each cup of emmer farro, bring 2 cups of water to boil. Add emmer farro and reduce heat. Simmer for 15-20 minutes, or until desired chewiness. Try in salads, pilafs or
